"Helping the World Discover Adel" - Vol. 92 June 2016
|
When you have family a full calendar is just a fact of life. Years ago my wife and sister-in-law would sit down with their calendars at Thanksgiving and coordinate each upcoming date and weekend through September. It was always written in pen and treated as gospel. Aunts, Uncles, Parents, cousins, everyone checked with them as to what was going on and where they were supposed to be.
I'd pity an unplanned event trying to wedge it's way onto the calendar. I used to kid them that we once missed a funeral because it hadn't been scheduled. We didn't, but it was fun to see the calendars come out just to verify that I was wrong.
Today the paper calendar has been replaced by the phone, social media and my daughter's texting me. So when the staff suggested we do an Adel Summer Guide it just seemed right.
So grab a cup of coffee, there's a lot to cover this month and we look forward to seeing you in Adel.

Recipe of the Month - Peanut Butter Truffle
As I've mentioned, our family is made up of several generations of cooks, bakers, and pastry makers. We think its important that food look good and taste even better. None of us as much as Aunt Nell. Every family has an Aunt Nell. When the girls were off at college they received packages of homemade cookies, lip gloss and nail polish to get rid of the homesick blues. She's actually my sister-in-law, and younger than me, but I've been calling her Aunt Nell as long as the kids have. She has never forgotten a birthday. She tells wild, animated, real-life stories that make the whole house shake with laughter. One year on my birthday she surprised me with a homemade dessert that put 20 pounds on me just looking at it. The topper was the handmade candles because the dog had eaten the real ones and "It wouldn't be a real birthday cake with candles!". Have you ever looked at a pretty picture of a decorated birthday cake and thought, "no way I could pull that off." Aunt Nell is the person that pulls it off, picture perfect, every time. I could say her secret is lots of coffee and 3am wake up calls, but the truth is love. She loves to bake, she loves to bake for the people she loves, and the fact that she has so much love to give can only be dished out in beautifully constructed and exceptionally tasty 5 layer portions. This month we send our love to all the Aunt Nell's with a special recipe that may seem daunting, but we know you can pull it off. Peanut Butter Truffle Chocolate Cake
INGREDIENTS: Chocolate Cake 1 C. Flour 1 C. Sugar 1/4 C. + 2 T. Hershey's Special Dark Cocoa Powder 1 tsp Baking Soda 1/2 tsp Salt 1 large Egg 1/2 C. Buttermilk 1/2 C. Vegetable Oil 3/4 tsp Vanilla 1/2 C. boiling Water
Peanut Butter Truffle 20oz Peanut Butter Chips 2 1/4 C. Heavy Cream 1 C. (8 oz) Mascarpone Cheese
Chocolate Icing 1/4 C. Shortening 1/4 C. Butter 2 C. Powdered Sugar 1/4 C. Hershey's Special Dark Cocoa Powder 2-3 tsp Water
DIRECTIONS: Chocolate Cake 1. Prepare 9 inch cake pan with a parchment paper circle in the bottom and grease the sides. 2. Add all Chocolate Cake dry ingredients to a large bowl and whisk together.
3. Add Egg, Buttermilk and Vegetable Oil to the dry ingredients and mix well.
4. Add Vanilla to boiling Water and add to mixture. Mix well.
5. Pour into cake pan and bake at 300 degrees for about 33-35 minutes, or until a toothpick comes out with a few crumbs.
6. Remove cake from oven and allow to cool for about 10 minutes, then remove to cooling rack to cool completely.
|
Peanut Butter Truffle 1. Put Peanut Butter Chips into a mixing bowl.
2. Microwave Heavy Cream until boiling, then pour over Peanut Butter Chips.
3. Cover bowl with clear wrap and allow to sit for 5-7 minutes.
4. Whisk mixture until smooth, then cover and place in refrigerator for about 45 minutes to an hour until thickened and spreadable.
5. Stir in Mascarpone Cheese until smooth.
Assembly 1. Once cake has cooled, use a serrated knife to cut off the cake dome.
2. Place cake into 9 inch springform pan, lining sides of pan with parchment paper so that it sticks up above the edge of the pan.
3. Pour Truffle mixture over cake and spread evenly. It may come above the edge of the cake pan, but your parchment paper should be high enough.
4. Refrigerate until firm, 3-4 hours.
5. Once truffle layer is firm, remove cake from pan.
Icing 1. Beat Butter and Shortening until smooth.
2. Add Powdered Sugar, Cocoa and 1 tsp of Water and mix until smooth.
3. Add more Water as needed until the icing is a smooth consistency.
4. Pipe icing around the edges of the cake, then drizzle with chocolate sauce.
5. Refrigerate until ready to serve.
Enjoy!

Terry Traveler - Family Camping
June, what a wonderful month for nature. The grass is green, the sky is blue, and the air is humid. Yes, it is I, Terry Traveller, here to tell you another wonderful tale of humility and humanity. You see, June was once the mark of a deeply held tradition in my family- the camp out. Father would spend weeks preparing lists: supplies, rations, biodegradable toiletries, everything we needed to "rough it". I was never selected to attend the shopping trip to the army surplus store- I was told my presence would be distracting. To this day I beg to differ as the single time I was allowed to go shopping with my father we spent less than expected. Yes, we forgot the tent poles, canned food supply, and bug repellent. I blame it on the improperly labeled can of Bear Mace and the dare I say unnecessary trip to the emergency room to apologize to the shopkeeper for spraying it throughout the store like Lysol. Besides, I like to think that everything happens for a reason, and as Fate would have it, that same summer we came face to face with a real bear. It was the middle of the night and we heard a noise outside our tent. All eyes turned as Father asked if I had tied up the rations in a tree. I had not, clearly stating my defense that I believed putting food in a tree would attract a wild cat of some kind therefore chose to put the food under the picnic table. The family didn't appreciate this heartfelt favor but were immediately hushed when the shadow of a great big bear crossed the face of the tent. A lightbulb went off over my head. With the shopkeeper's words singing in my ears I gathered my courage, sprang from the tent, flailed my arms and screamed, "You spray it, you bought it!" letting out a terrible cry as I unleashed a thick fog of pepper spray into the air. The bear was caught off guard, perhaps by the mace which I managed to direct straight into my eyes- or the knowledge that I was no one to mess with. He scampered away into the night and I was deemed a hero. The local papers proclaimed "Lucky Child Keeps Eyesight", "Tourist Attacked By Self", and "Kid Inhales Bear Mace, Grow 3 Inches Taller Overnight. The Miracle Science Can't Explain!"So enjoy the June bugs, go hiking, check out the beautiful countryside that nature has painted picturesque in our honor. Go camping with a roll of duct tape, the sun at your back, and a can of Bear Mace in your pack. Just watch where you point that thing and try not to inhale. This is Terry Traveler saying, it may not be true, but it might as well be.
