When I was a kid, meatballs were the latest craze. These toothpick-friendly party classics were an ideal appetizer for any hostess with minimal culinary skills and a frugal budget.

Ingredients could be selected from a well stocked pantry or the weekly grocer's ad. Sauces could be simple, traditional, international, or straight from a can and never fail to impress. With minimal prep and simple cleanup, meatballs quickly became a staple at family reunions and gatherings across the US.

This month, we bring you just one of the hundreds (if not thousands) of ways to prepare Porcupine Meatballs, named for their use of rice instead of breadcrumbs.

Ingredients: 1lb. Ground Beef 1/2 C. Brown Rice, uncooked 1/2 C. Water 1/2 C. Onion, minced 1 clove Garlic, minced 1 tsp Salt 1/2 tsp Garlic Powder 1/2 tsp Onion Powder 1/2 tsp Beef Bullion 1 T. Worcestershire Sauce 1 Can Tomato Sauce, 15oz. 1 C. Water Directions: *Kitchen Tip: If you are concerned the rice will be undercooked or unpleasantly crunchy, consider using parboiled rice or "restaurant rice" which is known to cook evenly and may reduce baking time. In a large bowl, combine Ground Beef, Brown Rice, 1/2 C Water, Onion, Garlic, Salt, Garlic Powder, and Onion Powder.

Portion and shape 16-20 meatballs.   Preheat oven to 350 degrees. Dissolve Beef Bullion with 1 Cup Water. Meanwhile sear the meatballs in a nonstick skillet to lock in moisture. Note: do not fully cook the meatballs- they will cook further in the oven. In an 11x7 baking dish, combine Tomato Sauce, Worcestershire Sauce, and Bullion mixture.  Nestle meatballs, turning to coat with sauce evenly. Cover with foil and bake meatballs for 45 minutes. Then, uncover and cook for an additional 15 minutes. Plate with toothpicks and enjoy! Enjoy!

Once I had a love to call my own. A gentle soul with glassy eyes and a heart of pure gold. We went everywhere together, traveling the seven seas to uncharted lands. It was love, true love. Love worthy of sonnets and rock ballads and grammatical errors alike.

We met near the Swiss Alps, or perhaps Paraguay. I think there was a mountain in the distance, or a travel poster featuring a mountain. I may have imagined the mountain, for it was love at first sight and all the land paled in comparison to my one true love!

Ah, the years we spent together, the conversations most dear, the never changing glances of those who walked past, bewildered by the perfect harmony of our love, of those who dared to dream that they too, would one day be as lucky as we.

And then, in one fateful moment, I left the door open and out you ran into the night. Your tiny little feet scampering about, left, right, and then whoosh! Picked up by an owl and swallowed whole.  "Pooperdoodle!" I cried as I sank to my knees and cursed the heavens, "my poor little chinchilla! Take me, you greedy owl, please take me instead of my sweet, sweet Pooperdoodle!"

Now and again, when a dust bunny creeps across the floor, my heart swells, and ultimately drops, knowing my love is gone. But as sure as I know that DOT orange will always be fashionable, I too, know that my heart will go on, and on, just like Celine said it would.
